Instapot Steel Cut Oatmeal

Sometimes there is nothing like a warm, nourishing and yummy bowl of oatmeal in the morning. 

When I was young, I'd eat those oatmeal packets where you pour them into a bowl and mix with water, then pop it into the microwave. 

I used to LOVE that sweet and salty , yet upon my awakening, I wouldn't touch those packets with a 10-ft pole!  

I still love oatmeal and have grown to love making every batch with love and intention. 

For some reason, I prefer steel cut oats over regular rolled oats. 

My favorite brand, is the Organic Sprouted Steel Cut Oats from One Degree. Photo below of it below: 

The trick is to make oats more digestible and kinder to our bodies, is soaking them for 8-12 hours before cooking them. 

Sprouted oats will always be easier to digest and the first step will always be so SOAK YOUR OATS the night before!

Apple Cinnamon Granola (Grain Free!)

Granola has a bad rap.

Most store-bought are full of processed oils, tons of sugars, and ingredients that aren't recognizable by Mother Nature.

Many also have GMO's which wreak havoc on our digestive system and make pesticides even harder for the body to break down!

I have yet to find a legit granola I like.

So of course, I had to make my own! 

This is a yummy granola recipe I love to eat with a clean whole milk and 100% grass fed yogurt and then top it with fruit like sliced bananas and fresh blue berries.

It's also super yummy to just eat it like cereal with your homemade nut and seed milks

It's super quick to create and simple to throw together, bake, and enjoy.

Don't get too caught up on having ALL the ingredients. You can sub different nuts and seeds or just make it even more simple because sometimes less is more!

Buckwheat Porridge

Did you know that buckwheat isn’t wheat… it’s a seed. 

So crazy, I know :) 

This naturally gluten-free seed is nutrient-dense and is high both in protein and fiber. #boom

Buckwheat seeds, also called “groats” are packed with nutrients and antioxidants and are often referred to as a “superfood”. 

They are also a high source of amino acids, vitamins, minerals all with relatively few calories.

What else do you need in life?! 

This high fiber and easily digestible food can be made into a yummy porridge to mix up your breakfast. 

I always recommend mixing up what you eat! 

Just like I do in my oatmeal, I always add an egg, or two, to this porridge a few minutes before it's done. 

The egg(s) make it fluffy and adds protein! Our bodies love and need protein and adding healthy protein will keep you satiated longer!

Easy Veggie Breakfast Combos

Greens and veggies for breakfast may sound a little ridiculous…
 
I remember when I first heard about this idea of eating plants first thing in the morning, I thought, "why?"!
 
I was beginning each day with a bagel or scone and up to 5 cups of coffee. One of which was some high sugar fancy drink from Starbucks.
 
I had gained 20 pounds in one year due to this poor morning habit. I look back and just think how crazy it was that I had no clue why I was:
 
1. Always tired
2. Had low energy around 10am and 2pm EVERYDAY!
3. Bloated and gassy (so gassy)
4. Irritable
 
These were not the only symptoms going on. I had indigestion and my body constantly ached.
 
You see, what I realized was that when I began each day with processed simple carbohydrates and tons of caffeine, I set my day up for disaster.

Who doesn’t love waffles? I mean really?

If you haven’t figured it out yet, when it comes to food, I make every bite that goes into my body nutrient-dense and the most nourishing as I can. When so many people are against grains and carbs these days, I rebel and say “YES YOU CAN HAVE BREAD, WAFFLES, PANCAKES, MUFFINS, etc.” It’s all about how you prepare them! We are moving back to tradition and slow food my friends.

Like with everything we eat, there is always a way to source better ingredients and create our fuel in a way that shifts it into information our body can receive and metabolize.

My kids love waffles. I mean LOVE them. For a long time I researched on how to create waffles so that I felt good about feeding my little spawns. Behold Sourdough Buttermilk Waffles.
