Instapot Steel Cut Oatmeal

Sometimes there is nothing like a warm, nourishing and yummy bowl of oatmeal in the morning. 

When I was young, I'd eat those oatmeal packets where you pour them into a bowl and mix with water, then pop it into the microwave. 

I used to LOVE that sweet and salty , yet upon my awakening, I wouldn't touch those packets with a 10-ft pole!  

I still love oatmeal and have grown to love making every batch with love and intention. 

For some reason, I prefer steel cut oats over regular rolled oats. 

My favorite brand, is the Organic Sprouted Steel Cut Oats from One Degree. Photo below of it below: 

The trick is to make oats more digestible and kinder to our bodies, is soaking them for 8-12 hours before cooking them. 

Sprouted oats will always be easier to digest and the first step will always be so SOAK YOUR OATS the night before!

To do so...

  1. Place 2.5 cups of oats in a large bowl
  2. Cover with filtered water
  3. Add 2 Tbsp. of ACV
  4. Mix well and let soak overnight

The following recipe is for a larger group of people, so be sure to make what you need by following the directions on the package of the steel cut oats. 

Steel Cut Oatmeal 

Serving Size: 8
Tools Needed: Instapot 

Ingredients:

  • 2.5 Soaked and rinsed steel cut oats
  • 3 tbsp. of coconut oil
  • 2  tbsp. of maple syrup
  • 3 tsp sea salt
  • 3 cups of filtered water
  • 2.5 cups of nut/coconut milk
  • 3 tsp of ground cinnamon

 Directions:

  1. Rinse steel-cut oats and set aside
  2. Set Instapot to Sauté Setting and adjust to high heat
  3. Add coconut oil and stir until oil is melted
  4. Add oats and stir to coat them with oil, stirring frequently for about 4 minutes
  5. Add the rest of ingredients
  6. Secure lid and set pressure release
  7. Press Cancel and select Manual and adjust to 10 minutes
  8. Allow pressure to release naturally (about 15-20 minutes)
  9. Stir the oatmeal
  10. Serve with love

Serve and/or top with :

  • Coconut Sugar
  • Maple Syrup / Honey
  • Chopped nuts
  • Coconut Chips
  • Berries
  • Bananas
  • Nut Butters
  • Your favorite Yogurt 

THEN ENJOY!! 

Now I'm going to blow your mind! I'm a HUGE advocate for including protein in EVERY meal. Personally, I can't survive on just oatmeal, I need protein! 

A trick I leaned some time ago, is to add eggs to the oatmeal! 

WHAT?! 

I know, just stay with me! 

So for this recipe I would add in 4-5 eggs and here's how I'd do that. 

  1. Crack eggs into small bowl
  2. Wisk to combine
  3. About 5-10 minutes before serving oatmeal, add in the whisked eggs and combine well. 
  4. Allow to cook for the remaining time and serve to order! 

The eggs will not only add protein and help you feel more satiated, but will make the oatmeal fluffy and SO extra yummy! 

I highly recommend! 

Just play with it! 

The options are endless and it's such an easy breakfast to throw together in the morning before everyone wakes up! BOOM, you are supermom!
