Divine & Delicious Burrito Bowls

What I've learned about fueling the body with whole, real, clean food is that you can eat all the things you love, all you have to do is elevate and upgrade the ingredients! 

This is a dish the whole family loves! When I'm not on a cleanse, I'll put the beef into Siete brand tortillas or taco shells. On cleanse, I just put it all in a bowl and go to town! 

I was born in, and currently live in New Mexico where these dishes are staples in our weekly menu. The question is always, red or green chile? 

Whether you like spicy food or not, you can modify this dish the way you like it! I give you three beautiful parts to this dish and you can modify as you see fit! 

Let's do this... 

Divine & Delicious Burrito Bowls 

Serves 4 

Meat Base Ingredients: 

  • 1 pound grass-fed beef
  • 1/2 yellow, white or red onion, diced 
  • 1 red, yellow, or orange bell pepper, diced 
  • 3 garlic cloves, pressed or minced
  • 2 tbsp of high heat oil, I use avocado oil or grass-fed ghee 
  • 2 - 3 tsp cumin ( I LOVE cumin and like a lot of it in this dish, choose your poision)
  • 1 tsp paprika
  • 1/2 tsp red pepper flakes (if sensitive to spicy, omit)
  • 1 tsp onion powder
  • 1 tsp oregano (or use Italian seasoning)
  • salt & pepper to taste 

Directions: 

  1. Heat a large sauté pan on medium to high heat. 
  2. Place high-heat oil in pan
  3. Add onions and bell peppers, and sauté for about 4-5 minutes. 
  4. Add in garlic and cook for another 2-3 minutes stirring consistently. 
  5. Add beef and stir in. 
  6. Turn heat to low and slowly cook,  stirring occasionally until beef is cooked, but not overcooked! 

Beans: 

  • 1 can organic pinto beans (I usually use homemade beans but canned is the easiest for most people) 
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian Seasoning
  • 1 tsp sea salt 

Directions:

Place all ingredients in small sauce pan, mix well, and heat until simmering. 

Lime Cabbage Slaw Side Salad 

  • 1/4 red cabbage sliced super thing
  • 1/2 red, yellow, or orange bell pepper, diced
  • 4 green onions (or you can use any onions about 1/4 cup), chopped 
  • 1/4 cup chopped cilantro
  • 1 tomato diced 
  • 1 avocado, chopped 
  • Juice from 2 limes
  • 1 tbsp. extra virgin olive oil 
  • Salt & Pepper to taste 

Directions: 

1. Make Side salad by adding all ingredients and mix well. Store in refrigerator while you cook rest of the dish. 

Toppings: 

  • Fried Eggs (I usually do 1 per person)
  • Green or Red Chile 
  • Raw organic cheese from grass-fed pastured cows. 
  • Organic sour cream from grass-fed pastured cows. 

Once you have all the "parts" created, place the beef on the bottom, then beans, then toppings, and lime salad. You can keep salad separate or mix it all together! 

I guarantee you'll begin to find new ways to make this dish! You can even nix the beef and just eat the beans, toppings, and side salad. The world is your oyster when it comes to burrito bowls!
