Pesto is packed with one of my favorite herbs, basil!
This beautiful green herb offers the body many benefits as it is:
It can also provide protection against bacteria growth and has been shown to inhibit resistant strains of bacteria!
I try and include as many herbs as possible in my diet, as they not only provide us tons of health benefits, but they add flavor and depth to almost any dish!
One of the main things I do to stay on track is to make things in advance for hangry Becky that tend to show up once in a while.
I absolutely love dips like hummus, pesto, and guacamole, as they can be made in advance and devoured with cut-up veggies and gluten-free crackers.
This pesto recipe can also be combined with spiralized zucchini noodles, grain-free pasta, or mixed into sauteed veggies or added to a marinara sauce, like my favorite veggie-infused marinara sauce!
Also, basil is SO easy to grow, so maybe play with growing some on your own!
Put all ingredients into a high-powered blender or food processor. Mix until desired consistency is reached.
Eat with cut-up veggies like cucumbers, carrots, and jicama.
Fresh basil :)
Add pine nuts :)
Add parmesan, garlic, and lots of love.
Process until it looks almost like a paste... then Voila :)
Place into an airtight glass container and place in the refrigerator for up to 4-5 days.
Here's the thing, eating healthy never has to be restrictive or boring. I'm all about eating delicious food that is nourishing and yummy for the entire family!
