Gut Healthy Chocolate Peppermint Smoothie

 If you don't think chocolate and peppermint belong together, we can't be friends. 

 When I was little I'd always order chocolate mint ice cream. No matter what. 

This creation has taken years to come to perfect. I was always awarded with food or offered it when I wasn't happy. For so long I was an emotional eater and I had the extra 20 pounds to prove it. 

In the last 10 years, I have completely changed my relationship to food and my body. I've had a lot of healing (and still so much more to go). This is why I'm so passionate to share delicious, nutritious, and healing recipes and messages. When we become our own advocate for our health and reclaim our power, everything shifts. 

 Along the way, I've also learned that, smoothies can serve many needs. They can be a quick and nutrient-dense meal, snack, or dessert! 

This recipe is so yummy, even the kids love it! 

Let's do this...  

Gut Healthy Chocolate Peppermint Smoothie 

Ingredients: (Serves 2-4) 

  • 3 frozen bananas
  • 1 cup of ice
  • 2 dates
  • 3 tbsp cacao
  • 1/4 cup nut butter (highly recommend Homemade Cashew Butter, trust me.)
  • 2 tbsp flaxseeds
  • 2 scoops of high quality collagen like Great Lakes or Vital Proteins
  • 2.5 cups nut milk 
  • 1 can full fat canned coconut cream (I get the organic option at Trader Joe's)
  • 2-3 drops of peppermint oil (I use Young Living)
  • 2 tbsp organic (sprouted if possible) rolled oats
  • Optional toppings
    • cacao nibs
    • hemp seeds
    • fresh mint leaves
    • freshly ground flaxseeds
    • chia seeds

Directions: 

  1. Place all ingredients, EXCEPT oats, into high-powered blender - I use a Vitamix
  2. Blend on high for about 20 seconds, or until it's almost like you want it. 
  3. Add in rolled oats
  4. Blend for another 10 seconds. Adding oats last will give the smoothie some texture and require us to chew a little to help us digest it! It also makes it so yummy! 
  5. Serve! Optional add cacao nibs, chia seeds, freshly ground flaxseeds, hemp seeds, or nothing! 
  6. Enjoy immediately! 

This is one of my go-to smoothie recipes for weekend nights! Instead of crushing a pint of gut-killing ice cream, I enjoy this deliciousness and feel SO good after!
