Simple Sweet Potato & Zucchini Hash

Whenever summer transitions into fall, I take full advantage of the new seasonal produce coming into play. Just so you know, peak season for sweet potatoes is October through March. 

Sweet potatoes are such a beautiful source of complex carbohydrates. They help stabilize blood sugar, are high in antioxidants, and are packed with Vitamin A, the immune system LOVING vitamin! 

Whenever a diet removes any macro-nutrients, I recommend you run the other way! Our body needs ALL of these to function properly. So instead of consuming simple processed carbs, focus on the plethora of beautiful Mother Nature made complex carbohydrates to satiate you carb-cravings. Not only do we need complex carbohydrates to  balance our hormones, but also to create balance in our appetite and metabolism! 

Pair this root veggie with zucchini (also loaded with nutrients - vitamin C & antioxidants), garlic, and onions (both which the gut/microbiome LOVE, you get a delicious and nourishing dish that is SO good! It's satiating and downright delicious. 

I eat this dish with: 

  • Fried or scrambled pasture raised eggs
  • Clean meats like pastured chicken, grass fed steak, or wild-caught fish
  • As a filling in omelets with real sheep feta cheese 
  • Cooled and served over greens with an avocado dressing (recipe coming soon)
  • I even just heat up and eat with 1/2 avocado! Boom 

Okay enough chit-chat. Let's do this: 

Simple Sweet Potato & Zucchini Hash 

Ingredients: 

  • 1 large sweet potato, cut into cubes
  • 1 zucchini, diced  
  • 1/2 large onion, diced 
  • 3 garlic cloves, pressed or minced 
  • 4 tbsp of high quality oil. I use grass fed ghee, coconut, or avocado oil 
  • Salt & Pepper to taste 
  • Lots of love 

Directions: 

  • Heat up your sauteing pan or skillet 
  • One hot, place 2 tbsp of your oil and allow to melt and spread across pan. 
  • Add sweet potatoes. Mix in the oil to coat completely. 
  • Cook sweet potatoes, stirring occasionally for  for 5-6 minutes. 
  • Add onions, mix well, and allow to cook stirring occasionally for 3-4 minutes until onions are translucent and aromatic. 
  • Add zucchini and garlic, and continue to cook until potatoes are easily pierced with a fork, but not mushy... unless you like them mushy, go for it! 
  • Salt & Pepper to taste. 
  • Add love. Look at your creation and sent it love... yes this is the most important part of the recipe. 
  • Serve immediately or store in an air-tight glass container for up to 3 days.
