Chicken Fajita Salad

This is such a simple and delicious dish. I always make extra, so I can eat more of it tomorrow. I always add green chile, I'm from NM, and it's an absolute staple! You can always up the spice with red peppers or even jalapenos. Make it easy and batch cook, so you can eat more tomorrow too!

Just a little insight, all my meals consist of four important components:

  1.  Clean Protein (Consciously & Ethically Sourced)
  2. At least 5 colors of veggies (always including greens & herbs), this will cover fiber intake!
  3. Healthy fats - vital for cellular health
  4. Yumminess

This chicken fajita salad checks all the boxes, especially number 4! I love meals that not only taste fucking delicious, but are satiating and savory. Okay, let's do this.

 Fajita Ingredients:

  • 1 medium onion sliced into slivers
  • 1 small bell pepper (any color will do)
  • 3 cloves of garlic minced
  • 2-3 cups of cooked chicken (rotisserie or grilled)
  • 2 tsp. cumin
  • Everyday seasoning (I LOVE @Slavosalt all-purpose seasoning
  • Salt & pepper to taste
  • Avocado oil or ghee
  • 1/2 cup roasted hatch green chiles (optional)

Cabbage salad ingredients:

  • 1/4 large green cabbages cut into slivers or chopped
  • 4 green onions chopped
  • 1 cup sliced cherry tomatoes
  • 1/4 cup lightly packed chopped cilantro
  • Juice from 2 limes
  • Salt & Pepper to taste
  • 2 tbsp Extra Virgin Olive Oil.

Fajita Directions:

  1. To make fajitas, heat a medium to large saute pan on medium low.
  2. Heat oil/fat of your choice.
  3. Add onions, peppers, and garlic.
  4. Saute for about 5-6 minutes. Onions should be translucent and peppers soft but not soggy.
  5. Add in cooked chicken.
  6. Cook until chicken is heated through.

Salad Directions:

  1. Add all ingredients to a small mixing bowl. Mix together. So simple.

I love to divide a serving bowl into halves. Put the salad on one side and the fajitas on the other. Sometimes I even heat a grain-free tortilla like from Siete Foods in the oven with a handful of raw cheddar or goat cheese. It crisps up nicely in about 3-4 minutes at about 350 degrees.

Eating yummy healthy and clean food is my trick to keeping lean but never feeling deprived. One of the ways I teach this lifestyle is through my clean eating programs. I have a new 14-Day Gut Reset Program  that combines the art of eating clean with steps to reset your gut, which is the foundation to health. I believe eating well is 75% of feeling AMAZING! I suffered from anxiety, depression, hormonal and digestive issues for years. What I can tell you is that feeling like shit is not normal! Changing the way you nourish your body, mind, and soul is all a part of this journey in life. I'm so passionate in helping others reach their goals, so if you need guidance, reach out!
